Sorry for the delay in posting; I’ve been under the weather for the last several days. Monday and Tuesday nights, Joey gave me NyQuil at 8:30 and I was passed out at 9:30. Last night was our first Choir rehearsal after ITC09, so I was pretty tired when I got home. Thankfully, the wonderful Mr. PhD made our veggie “fried” rice for us, so dinner was already made when I got home and I had nothing else to do. Unfortunately, Criminal Minds was preempted due to the stupid People’s Choice awards, so we ended up watching Glee which, while funny, didn’t really hit the spot like my beloved Dr. Spencer Reid would have.
Anyway, on to other things…
Falafel = yummy! I made this recipe from About.com’s Middle Eastern Food site. Here’s where you can find the recipe. I opted for patties rather than deep-fried balls (hehehe), and then I baked them in a 400 degree oven for probably five or six minutes to firm up the insides. I also added an egg for extra binding power. They were pretty light and yummy, and I topped them with tahini and served them with a side salad (Italian lettuce mix) and a little Caeser Vinaigrette (from Kraft). My guinea pigs food testers agreed that they were tasty. However, the next time I make them, I’ll probably make the mix a little more coarse and use less oil to pan-fry them so that they’re not quite so greasy.
There’s been some good eats in Melanie-world…some not-so-good, too, but I didn’t picture those;)
There was 1/2 a multigrain bagle from Caribou and a small coffee with 2% milk, Splenda, and a little white cocoa powder. Like my coffee clutch?? It’s not hand-knitted like the ones I gave Mom and Dad, but it’s pretty badass, eh? You can buy it at your local Caribou:).
And, Monday’s dinner was ESPECIALLY awesome:
Mr. PhD participated in the blog by taking the photos! He cooked for me since I wasn’t feeling well (but under my watchful eye and instruction) and made veggie fajitas!! It’s just a mixture of peppers (green, red, yellow) and onion sauteed until charred to a crisp fajita-styled and perfect. We had them with whole-wheat tortillas, fresh tomatoes, fat free sour cream, and a little cheddar cheese. I had two. I also took some leftovers to work for lunch the next day and made a fajita-salad and it was pretty freaking awesome.
Planning meals for the week has worked really well; we bought exactly what we needed, stayed in our budget, and I’m trying two new recipes this week. Joey’s excited about it and so am I. Tonight, I’m making Japanese-style soup with tofu and rice noodles. I think it’ll be just the ticket for a cold and potentially-snowy night:) (which, in NC, means that we may have up to 1/2 inch with little accumulation. Which means that everyone will be flooding the grocery stores today for bread and milk like the apocalypse is coming).
This morning I made the most AWESOME breakfast….a buffalo-style omelet!! I’ll post the recipe a little later today. Enjoy your Thursday!
